I got my knee down with proper form after 2 hours of owning it. Been riding for little over a year now (excluding riding lessons).

It's the state of mind you need, not experience and/or skill.
If you allow yourself to grow, take some risk, and ride with others/watch others, you'll improve lots. Monkey does as monkeys do.
Perhaps I'm one of the odd-ones out.

No I didn't, a car pulling out in to me, without indicators, mirrorcheck and a phone in his hand totaled it.

I think the people who scream "omg 600cc bikes = newbie mega-death" are ridiculous, but none the less a supersport simply does not make a very welcoming bike for a new rider.
Having mental maturity will help, but it won't stop you from making some type of error due to lack of experience. And when you make that error, it will be less dangerous on a 250 or a 500 than a 600cc race bike (read LESS dangerious, there is no way to eliminate the danger).
